There’s nothing better than the perfect steak is there !! Tender, juicy, flavoursome – YUM Cooking steak to perfection can be a delicate operation. Especially if you are not using a good quality brand of steak to start with. At Carnevore’ what’s great about our steak’s is they are ALL good. And, even better, they are all good for you !! It’s not just the all time favourites like Scotch Fillet or Porterhouse that cook up well. It’s all of them. Rump, T-Bone, Topside - STOP IT – your making me hungry ! Here’s what we do, and we aren’t saying this is the only way to cook a good steak but it works every time for us.
STEP ONE Remove the steak from the fridge at least an hour before cooking. On a cold day leave it out for even longer. We prefer to cook steak from room temperature. Don’t ask me why but we just find this is best.
STEP TWO Season the steak. We only use Sea Salt (our favourite is Maldon) and Ground Black Pepper. There’s a multitude of steak seasonings out there and some of them are fantastic. But our steak just doesn’t need it. As our meat is dry aged for 21 days it has a very distinct, mature flavour. It seriously doesn’t need anything else. We season both sides of the steak. I don’t know about you guys but the best heat we can get is always on the BBQ. There’s just something about the taste of BBQ cooking. And it’s a great excuse to be outside in the fresh air.
STEP THREE Pour yourself a drink or grab a beer, it just add’s to the experience.
STEP FOUR We always put our olive oil on top of the steak, not on the BBQ or pan. I know, it might sound silly but that’s what we do and some how it works a treat. Heat the BBQ or pan for several minutes. You want to hear the steak sizzle when it hit’s the pan. To test, drop a little olive oil in and see if it bubbles. Once it’s super hot drop the steak on and leave. This seems to be the hard part for some people because they want to touch it all the time. Just let it sit there and sizzle. Within a couple of minutes you will see the red juices rise to the top of the steak. Now is the time to turn it over. Same thing – just let it sit until the red juices rise to the top. Now comes the tricky part. This process will take you to a ‘medium’ steak. From here we turn the heat off completely. Remove the steak and let it rest on a plate. If you want the steak cooked through to well done, leave it in the pan or on the BBQ but with no heat. Extra heat right now will dry it out. There’s plenty of heat still coming through to cook the steak further. After about two minutes resting your steak is done.
STEP FIVE Just sit, relax and enjoy. Your work is done !!
